The story

Sidr trees in Yemen's Hadhramaut bloom for roughly two weeks a year. Beekeepers move hives into the wadi for that single flow, producing a dark, date-and-caramel honey that Yemenis have prized for centuries. Manuka has marketing; Sidr has a 1,000-year head start.

It's thick as molasses, barely sweet the way sugar is sweet — more like dried fruit and smoke. Families in the Gulf gift it at weddings the way others gift gold.
